Katy’s food scene spends more time blending traditions than your average suburb, for good reason: it’s either honoring heritage or reinventing it. These Asian fusion spots have become well known for transporting diners across continents with dishes that merge Vietnamese pho with Texas brisket or Korean bulgogi with Mexican tortillas, making them as much of a local staple as Friday night football.

This is a regular stop in my rotation, because I love comforting broths, aromatic herbs, and slow-simmered soups. There’s always a craving for pho in my household and I love to unwind with it. So the idea of going somewhere and just letting the flavors wash over you, even in a restaurant, is big to me. I love the experiential thing of getting to share a big bowl and have it be communal. It’s really warm energy.

I like to go there when I’m feeling under the weather or something that’s low-key and cozy because it really puts you in that mood. It’s also pretty good for a casual dinner because it’s not crazy heavy. I mean, obviously you get pretty full because it’s broth and noodles, but it’s just individual components of the soup and some herbs. I usually get some spring rolls with shrimp and some Thai tea. The broth’s really delicious and well balanced. And it’s fun to customize your meal.

Maybe some people think it’s too simple to come to a restaurant and just have soup. But I think it’s really satisfying, especially if that’s the comfort you’re choosing.

AMA Kitchen is the most satisfying Asian fusion. It’s really good if you’re running errands in Katy and you have like an hour before your next appointment. If you can’t really commit to a fancy multi-course dinner, but you don’t want to settle for a drive-thru, it sits in that sweet spot where it’s like a modern food hall with plenty of choices. But it’s a little more flavorful and authentic than your average food court.

Depending on the time you visit, there can be a little bit of a line at the popular stations. It’s in-demand because the portions are so generous, still, all these visits later. If it ain’t broke don’t fix it! The spicy hotpot is really delicious and obviously not my go-to when I have a sensitive stomach because of the heat and the saltiness. I don’t want to have to worry about feeling parched. But when I’m just meeting friends and I want something hearty and shareable beforehand, it’s the best.

It’s my favorite spot for Taiwanese curry and Vietnamese specialties in that area.

Twenty Five Teishoku House is huge for me. I spend most of my time in that area because I’m a food writer and it is such a reliable spot for special occasions or casual dining because it’s right down to what you need: a little bit of classic Japanese cuisine, high-quality sashimi, and fresh wasabi. It’s right to the point, and good for celebration, and always well-curated, well-prepared, and reliable.

You can make little variations and changes so it doesn’t get too monotonous, but it’s all within a very small bubble of things that are appropriate to eat before you write. I lean on Twenty Five Teishoku House. They serve everything with care and it’s just good for working writers.

My favorite cuisine is Japanese and Korean food. So obviously I have to have a staple spot for authentic flavors in the neighborhood. Donkey Yaki is really delish and really high quality. The Teriyaki Beef Ribeye in particular is really me. It’s inside HMart, so it doesn’t get more convenient. It’s like obviously a little bit in the food court, but the ambiance is pretty nice. Anytime I have anyone who’s Asian fusion predisposed and we’re going shopping, it’s the number one choice.

And they tend to always have quick service, which is nice because you don’t have to worry about waiting or missing your meal time.

It feels like a sort of secret sister to the health-conscious crowd. Maybe I should regret keeping it on here and blowing up the spot, but it’s where the poke peeps go to grab their favorite bowls after work or customize something fresh with friends or just enjoy a quick, tasty meal. It’s definitely very much a community vibe. Every time I go there, I invariably see people from the neighborhood, so it’s definitely not somewhere to go to be anonymous. But it feels very much like home.

They make really good poke bowls and they have a really diverse selection of toppings that’s ever-changing that is always weirdly delish. The options change every time I go. There was a point at which they had zucchini noodles that were really delish that I used to love. They make really good low-carb alternatives, which is a healthy staple—after you’ve done a workout, you never don’t want something fresh and filling.

My friend Susan recommended this place the first time. It’s tucked away in a quiet corner of Katy, so it feels a bit removed from the usual hustle. You don’t necessarily feel like you’re having a typical strip-mall sushi dinner. But it’s very convenient and close to everything, and it’s great for before or after errands because it’s right in the neighborhood. But it feels a little bit more like you’re just having an intimate meal.

It has all the good staples, the fresh salmon sashimi, delicious specialty rolls, unlimited nigiri, all that stuff.

It’s not exactly hidden, but it’s tucked away in a strip mall—it’s not right on the main drag, it’s not in a fancy plaza, but it’s close enough that it’s really convenient for shopping. It’s where I go when I’m craving something different, or showing friends around, or family visiting who want authentic flavors but want to stay local. I love a Malaysian vibe. It’s my go-to type of cuisine and Market Eatery captures that perfectly and it’s just really delicious.

And it’s cozy inside and they have really good cocktails and good roti and good energy.

It’s definitely a staple and an iconic place. I love it half for the pool hall vibe that’s everywhere, because I always notice another quirky detail I haven’t spotted before. It always starts conversations with people who happened to catch the same game on one of the many TVs and just feel super relaxed. It’s become more bar regulars than just casual visitors over the years, but it’s real bar regulars. It tends to be people who are frequenting happy hour; it feels authentic.

And the food, it’s really yummy. I think it’s a really good pre and post-night-out place, particularly group-wise. It’s a really good, storied, Houston, capital H, capital T kind of spot.

I also really like their pho. Honestly, it was some inspo for our weeknight dinners, because it’s just flavorful and generous and satisfying. And the space is spacious, which always makes you feel really comfortable and relaxed.

My favorite thing is the classic Asian fusion spot: ramen, sushi, and so on. This really hits the spot. The service is really fast. I’ve gone between errands a couple of times when I’ve been very adventurous about the amount of food I’m going to eat. It’s just all the staples, all the classics, really well made and they come out really quickly. There are no ifs, ands, buts, or frills about it—it’s just really yummy green curry and all the good things.

And it’s right in Cinco Ranch, so it’s really very convenient. I was thrilled to see it pop up.

I love Asian fusion. I think I’m always in the camp of, like, if you’re gonna go Asian fusion, just go absolutely off and go whole hog. Let’s not pretend we’re not gonna feel stuffed. Like, let’s just do this. Yan Tea Cafe has fully huge portions. There’s BBQ chicken, pork, and duck coming over rice with vegetables and you can just eat as much as you want if you get that plate. It’s so indulgent and the most elevated basic Asian fusion that you can imagine.

It’s not Panda Express and it’s not like some fancy downtown spot, you know what I mean? It’s somewhere in the middle—a really nice, yummy, easy spot. The headline is meat, sauce, full stomach. You’re coming here starving and you’re ready to just absolutely protein load. It’s a very comforting place. It’s always warm and bustling and crowded and busy and loud with big family vibes. I just find it very comforting, both culinarily and energetically.

It’s a place that’s just a big hug of ginger scallion sauce and crispy pork belly. Although I think especially for those with smaller appetites, it’s not for the faint of heart. Me and my friend tend to bring a full box of to-go containers and set them on the table anytime we go somewhere Asian fusion.
