We’ve sampled more Asian fusion this year than we care to admit—some triumphs, some tragedies (cc a ‘deconstructed’ bao that arrived as a philosophical crisis on a plate). But a handful of spots in Meridian made us stop scrolling and start savoring. From a Korean-Mexican taco that haunts our dreams to ramen so rich it should require a waiver, these are the places where East truly meets West—and dinner becomes an event.
Cupbop – Korean BBQ

Korean barbecue is often described as comfort food and, although it’s a cliché, there’s also a part of us that looks at the beef bulgogi from Cupbop and thinks, ‘that would taste great on a rainy Tuesday night’. All of the dishes coming out of this Meridian spot are satisfying, but the beef bulgogi is our favourite of the lot. The portions are generous, but the quality doesn’t waver. A bowl of this marinated meat is simultaneously hearty and balanced. It’s a sort of edible hug.
Savory notes of soy (beef), crisp freshness (vegetables), embedded in a steaming hot (rice) base. It’s best paired with a friendly chat or, rather, a relaxed meal, and you best be prepared to return for it, pronto.
Happy Teriyaki – Overland Rd(Meridian)

Those who crave something savory will know there’s a difference in satisfaction between snacks and mains. One isn’t necessarily better than the other, but seeing a dish you love, or one that sounds reliably delicious, triggers a special kind of anticipatory hunger hum. This teriyaki chicken bowl from Happy Teriyaki is one of those. A proper mood-lifter. There’s much to like about this Asian restaurant on Overland Road, but you could (and maybe should) just come here for this bowl.
It’s a generous, flavor-packed serving, filled with tender chicken in that signature teriyaki glaze—warm, but not scalding hot—with a side of crisp steamed vegetables. It’s savory, it’s sweet, it’s hearty, it’s fresh, it’s satisfying, it’s a fast-food meal that’s come back from its wellness retreat in a very good way.
Riceworks Asian Street Food Meridian

Amid the bustling and somewhat overwhelming cafeteria vibe of Riceworks Asian Street Food is a haven of fresh, made-to-order delights. The friendly spot is decked out in simple, functional decor you find in quick-service spots all over Asia, but it’s the teriyaki shrimp that will transport you far from Meridian.
The dish, a generous plate of perfectly cooked shrimp glazed in sweet-savory sauce, would be comfortingly familiar if it wasn’t for the customizable kick of spice you can dial up to your liking. Grab a forkful with a potsticker before savoring the combination. No timid nibble. No hesitation with the spice level. No looking away, because you don’t want to miss this plate of satisfaction crafted by chef Daniel.
Riceworks Sushi & Asian Street Food – Kuna

If fried rice could talk, this combo number from Riceworks, a vibrant Asian fusion spot in Kuna, would be saying something like “book the table” or “you deserve a feast”. To be honest, even without a supernatural ability, this fresh, flavorful bowl of perfectly cooked rice with a spicy ninja sauce kick gets us in our comfort food feels. In a heated round of word association, this dish and satisfaction would be the perfect pair.
That’s not to say it should strictly be eaten when you’re craving Asian. We’ve found it to be a nice escape for those indecisive days, when your usual takeout spot feels tired, and you’re always one sincere “how was everything?” away from becoming a regular. If you’re into Asian fusion, get it. If you’re not typically into Asian food, get it.
Cupbop – Korean BBQ in a Cup

The fast-casual scene really had its moment this year, and while Korean barbecue joints steal the limelight, Cupbop – Korean BBQ in a Cup has a significant supporting role thanks to its convenient format. The Korean fusion spot injects needed flavor into quick meals, and its BBQ Beef became a regular order. Much like the best comfort foods, the spice level in the savory, tender dish adjusts perfectly, and our favorite version involved the extra-spicy option.
It blends with the rice and fresh vegetables at a mere stir, into the gochujang and sesame sauce, with crisp lettuce and carrots. If they keep this on the menu, it’ll be a routine we can get on board with.
Rice Contemporary Asian Cuisine

We are in full support of any pho that defies the laws of thermodynamics. How does Rice Contemporary Asian Cuisine pack such a rich, aromatic broth into a bowl that somehow stays piping hot from first sip to last? We’ll never know. We will however be adding the resident pho specialist of this remarkably pleasant Asian fusion spot to our holiday card list, because this steaming and surprisingly filling bowl is one of the best ways to spend fifteen dollars in Meridian.
It’s savory, a touch sweet, loaded with enough fresh vegetables and tender meat to cover every last noodle-laden slurp, and it’s potentially the most hypnotically comforting thing we’ve eaten since discovering the joys of takeout during college. Critical intel: the resident pho master’s broth runs out by 8pm, so make your way to this welcoming restaurant before the evening rush.

Come on, did you really think we’d get to the end of Things We Ate This Year That We Texted 5-7 Hungry Friends About—formal title: The Best Quick Bites Of 2025—without causing our wallets some serious emotional relief? Of course not, and now without further ado we would like to introduce CK Hawaiian BBQ’s chicken katsu. It is expertly, mouth-wateringly crispy, but never crosses the threshold into greasy, thanks to the perfectly tender, juicy meat inside that golden breading.
The teriyaki chicken is cooked just right and delightfully savory, except the sauce which is thickened by flavor and allows you to participate in a little hobby we like to call ‘attack of the plate’. It has texture. It has style. And like most things at this fast-food-style Hawaiian spot in Meridian, it has a tiny price tag. But if you’re ever going to spend under ten bucks on takeout, it should be for this fantastically satisfying platter.
Ling & Louie’s Asian Bar and Grill

Ling & Louie’s is a mouthwatering-sounding place for good reason, but few menus have been quite as vibrant and tempting as this one in Meridian. Plump little cloud-like crab Rangoon, a paddling pool of silken orange sauce, earthy pot stickers, a few calamari rings, and a dusting of sesame seeds on top. When this restaurant’s offerings might also feature words like ‘Korean salmon’ or ‘sushi rolls’, it’s easy to overlook a sharing tower.
And to anyone whose instinct is just that, we say more fool you. Or, rather, no tower for you.
Uncle Chai Bento Kitchen

We sometimes worry that fusion concepts can dilute authenticity into confusion. So to anyone who’s felt personally betrayed by some overcomplicated dish that had you questioning what cuisine you were even eating, this one’s for you. The daydream-worthy bento boxes at this Asian fusion spot in Meridian have the power to restore your faith in the good stuff. Thoughtfully arranged compartments are filled with comforting, flavorful Thai classics and creative Vietnamese touches, from multiple menus.
Surprisingly customizable, accommodating, and beautifully balanced. It tastes more fusion-inspired than forced, and will have even the most purist-averse tempted to nab the last bite.
Taste Asian Fusion Bistro

The perpetual issue with fusion restaurants is that they often promise the world but deliver dishes that feel disjointed, which is all fun and games until you leave wondering what exactly you just ate. But the Korean Beef tacos from Taste Asian Fusion Bistro in Meridian are the exception. The tacos are savory from the marinated beef, slightly sweet from the slaw, and incredibly satisfying thanks to the soft tortillas that hold everything together perfectly.
They’ve got the flavor punch you want from Korean food and still feel cohesive thanks to the thoughtful combination, which when eaten makes for a delicious, balanced, and delightful meal.

Sometimes teriyaki’s fast-food reputation makes us wonder which takeout staples are next in line for a hot and heavy rebrand. Combo plates, could it be you? The teriyaki bowl has hit Meridian menus like a soy-glazed meteor, but none quite measure up to this spectacularly charming version by tidy little strip mall spot, Happy Teriyaki.
The oh-so generous portions get a perfect seasoning, then a delightfully industrial quantity of fresh ingredients is added, before it’s prepared with quick professionalism. Finally, the perfect dose of hot, delicious teriyaki is served up. It’s satisfying, fresh, beautifully seasoned, and the ultimate invitation to order a crisp boba tea. We also think it is deeply chic that the combo B comes in childhood nostalgia ‘egg roll and rice’ form. A true power meal.
